Corn & Green Onion Quinoa
Ingredients
- 1 cup Quinoa dry
- 1 3/4 cups Water
- 2 cups Corn
- 4 stalks Green Onion
- 1 tbsp Tamari or Coconut Aminos
Instructions
- Combine the quinoa and water in a pot and bring to a boil over high heat. Once boiling, reduce heat to a simmer. Cover and let simmer for 12 to 15 minutes.
- Fluff the cooked quinoa with a fork and transfer to a mixing bowl. Add the corn,green onion and tamari. Toss well to mix and enjoy!
Notes
Leftovers: Refrigerate in an airtight container up to 4 days or freeze up to 1 month.
No Quinoa: Use rice or cauliflower rice instead.
Serve it With: Roasted chicken, pan-fried cod or salmon fillets, or add to a stir-fry.
