Chickpea Chocolate Chip Blondies

Ingredients
  

  • 2 Eggs large
  • 1 3/4 cup Chickpeas (one can, drained and well-rinsed)
  • 1/3 cup Pitted Dates
  • 1/4 cup Almond Flour
  • 1/4 tsp Baking Powder
  • 1/8 tsp Sea Salt
  • 1 tsp Vanilla Extract
  • 1/2 cup Dark Chocolate Chips

Instructions
 

  • Preheat the oven to 350ºF (175ºC). Line a baking dish with parchment paper.
  • Add all of the ingredients except for the chocolate chips to the bowl of a food processor. Process until smooth.
  • Stir in the chocolate chips, reserving a few to top the blondies with. Add the mixture into the prepared baking dish and sprinkle the reserved chocolate chips on top. Bake the blondies for 25 to 30 minutes or until they have set.
  • Let cool for 10 minutes before cutting them into squares. Enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to four days. Freeze for longer.
Serving Size: A 9 x 13-inch baking pan was used for 12 servings. One serving is one square.
Additional Toppings: Top with shredded coconut, chopped walnuts, and/or chopped pecans.
